General
In this hands-on practical training you will gain insight into the European legislation on additives, flavourings and enzymes. You will go hands-on to learn to consult the legislation and you will learn how to apply the legislation in practice. Prior to this classroom training you follow the e-learning module 'Looking in legislation'. This will ensure that your basic knowledge at the start of the training is at the same level as that of the other participants.
During the classroom training we alternate theoretical knowledge and backgrounds with practical exercises, so that after the training you know how the legislation works and how best to consult it. In addition to the legal frameworks for additives, flavorings and enzymes, notation and application are also covered. You will also learn to recognize a technical adjuvant and the topics of (reverse) carry-over and clean label will be covered.
Through many practical examples and by getting started yourself, you will be able to assess for yourself, based on European legislation, whether or not an additive is allowed in your product, you will be able to apply the correct flavouring names and you will know when an enzyme is allowed for use in a foodstuff.

Target
After this training you will be familiar with:
- consulting and updating the relevant and latest legislation (e-learning module "Looking in legislation," duration: 30 min, to be taken by participants prior to the classroom training);
- The contents of the European Additives, Flavors and Enzymes Regulations;
- The mandatory legal requirements for labeling of additives, flavorings and enzymes;
- checking whether additives are allowed in certain foods and
- the consideration when it is a carry-over additive, processing aid, clean label or coloring food.
Topics
- Explanation and construction of European legislation;
- Regulations (EU) No. 1332/2008 (enzymes), 1333/2008 (additives), 1334/2008 (flavors);
- Legal frameworks (definitions) for additives, flavors, enzymes and processing aids;
- Legal differences between consumer product labeling and additives;
- Clean label and coloring foods;
- Practical application of Regulation 1333/2008 on the categories and assessment of whether an additive is permitted.
The training is interactive and practical. Specific questions can be submitted prior to the training. The trainer will address this input as much as possible during the training. During various practical assignments the participants will consult the legislation via the Internet and learn how to apply this legislation in practice.
