The term "food safety culture" is becoming increasingly familiar within the food industry. Since the new GFSI 2020 benchmark mandated that every certification standard must include food safety culture, the BRCGS, IFS and FSSC have now firmly embedded it into the standards.

In legislation, this is laid down in Regulation 2021/382, a supplement to the existing Regulation 852/2004 on food hygiene. This also allows regulators, such as the NVWA in the Netherlands and the FAVV in Belgium, to assess the implementation of this legislation in your company.

These are external stimuli that cause you to do something with food safety culture. However, food safety culture is a subject that cannot be captured in a nice policy document or objectives. Culture has to do with all habits, behaviors and (un-)written rules within your company.

For example, can't get everyone to wear hairnets? Is the hygiene lock regularly skipped? Or does the quality seem to be different on one shift than the next? Then it may be time for a change.

Creating more rules or procedures is not the solution, adjusting behavior is. Meanwhile, Précon has successfully applied its method at several companies.

Why is food safety culture important?

Developing an effective HACCP plan requires a multidisciplinary approach, including, if necessary, expertise in fields such as veterinary medicine, microbiology, health science, food technology, chemistry and mechanical engineering. The food company must ensure that sufficient specific knowledge and expertise is available. Where this expertise is not available within the company, outside advice should be sought. External expertise can come from sources such as trade and product organizations, independent experts, government agencies, professional literature and hygiene codes.

Culture has to do with all habits, behaviors and (un)written rules within your company. According to Regulation (EU) No. 2021/382, companies must ensure food safety through management commitment, leadership, awareness of food safety hazards, communication and provision of adequate resources, among other things.
