We are proud! For many years we have been working with and on our HACCP philosophy. Now it is available to everyone in the official guidance document of FSSC. Based on ISO 22000, Paul Besseling has developed a clear decision tree with input from our customers and from KTBA. A practical tool to better apply the standard requirements.
The guidance document addresses the two main changes to FSSC V5 that have emerged from the 2018 version of ISO 22000. The changes concern the application of ISO's Higher Level Structure (HLS) and the innovation in the approach to CCPs and OPRPs. The Higher Level Structure is intended to make it easier to integrate management systems for quality and the environment, for example. So now this can also be done with the management system for food safety. An important part of the HLS is the so-called context analysis that looks at the strategic importance of food safety to the organization. Fundamental to understanding CCPs and OPRPs is that ISO 22000 distinguishes between two levels in assessing severity and probability. The first level focuses on the assessment of hazards, the second level on the assessment of failure of control measures. In the 2018 version of ISO 22000, these two levels of assessment are made more explicit. The decision tree in FSSC's guidance document clarifies how these two levels of assessment lead to the establishment of CCPs and OPRPs.Subscribe to our newsletter, our monthly look at food and non-food quality management.
