New e-learning 'Temperature control in the cold chain'

Perishable foods store at the right temperature. Cooling and freezing extend the shelf life of products. This prevents microorganisms already present in foods from growing further, prevents possible spoilage and preserves their quality.

But what should you do if the product has been in a warm environment during storage or transport? And what can you do to prevent a deviation in temperature?
