New decision tree in the Codex Alimentarius

HACCP has been enshrined in the General Principles of Food Hygiene of the Codex Alimentarius since 1993. The 2020 version of this document had been available for some time, but the decision tree adopted in March 2022 was not yet included in this version. The most recent publication corrects this omission.

The decision tree from the 1993 version proved to be quite confusing in practice, and even the experts from the Codex Commission on Food Hygiene did not get it right. The current decision tree is a simplified version. Interestingly, according to question Q1, significant hazards can also be controlled with Good Hygiene Practices (GHPs - as part of the basic conditions). This indicates that there are also GHPs that make a relatively large contribution to food safety. These GHPs should therefore be viewed as "GHPs that require greater attention," a concept introduced in the 2020 version.

Companies using FSSC/ISO 22000 certification will easily connect to this updated decision tree through the concept of OPRPs (operational prerequiste programs). Companies certified to BRCGS-9 can provide further detail on the "GHPs that require greater attention" through the new requirement 2.7.4. The IFS standard version 8 refers to "other control measures" to further define these types of GHPs.
